Easy homemade ice cream made with a mix of crushed strawberries and fresh strawberry chunks. Such a refreshing way to enjoy in-season strawberries!

We made it to the strawberry farm this week and came home with three gallons of strawberries! It was a HOT day, but had to take advantage of enjoying the strawberries when they are at their freshest and sweetest!
So far, we’ve had strawberry salads, made some chia seed jam, gifted a strawberry crisp, and adapted my recipe for vanilla maple ice cream to make fresh strawberry ice cream.
Fresh Strawberry Ice Cream
My two youngest kids were very eager to help me chop strawberries because it meant that they were able to try out their new kids’ knives from Opinel. We have been using Opinel knives for years (they are what our kids start with as their first pocket knives), so when they reached out to ask if we wanted to try their kids’ set, it was an immediate yes.
The chef’s knife in the set is perfect for kids of all ages. It’s sharp enough and big enough to be very effective (important to both kids and parents), and still safe enough to learn on. The tip is rounded to keep kids safe, and the knife has a special loop for fingers so kids can learn how to properly hold the knife while they work. (The set also comes with a finger guard to teach kids how to roll their fingers when holding the food, and high-quality peeler).
We worked through a gallon of strawberries together, slicing and chopping, without any hurt fingers. (My three-year-old and five-year-old were using the knives). PRO-TIP: put a piece of parchment down underneath the strawberries for easier clean-up, and to avoid staining the counters.
I looooooooove this easy ice cream recipe because its just as simple as combining the ingredients in a jar and refrigerating for a few hours. Then, my Cuisinart ice cream maker is as simple as pouring in the mix and turning it on to churn for 20 minutes.
This is basically the extent of ice cream making I can handle right now. But even though it’s so quick and easy, I don’t feel as if I’m compromising with sub-par ice cream. The ice cream is still delicious and the variations are endless.

Fresh Strawberry Ice Cream

Description
Easy homemade ice cream made with a mix of crushed strawberries and fresh strawberry chunks. Such a refreshing way to enjoy in-season strawberries!
Ingredients
- 2 cups chopped fresh strawberries, divided
- 2 cups heavy cream
- 1 cup whole milk
- 1/3 cup maple syrup
- 1 tsp vanilla extract
Instructions
- Add 1 cup chopped strawberries to a quart mason jar and use a spoon or spatula to muddle them in the bottom of the jar. Once the strawberries are soft and crushed, pour in the remaining ingredients, reserving the second cup of chopped strawberries to add just before mixing.
- Shake the jar a little to incorporate the ingredients, then chill in the fridge for at least 3 hours.
- Pour the ice cream mixture into your churn, add the remaining strawberries, and follow your ice cream maker’s instructions for churning. (For my cuisinart ice cream maker, I pour in the mix, turn on the machine, and then let it churn for about 20 minutes).
