Strawberry picking season opened where we live in North Carolina a couple of weeks ago and we did not waste much time before visiting our local farm to pick some RED and JUICY berries!
My kids love going strawberry picking, and I love that we can so easily share the experience. This year, I plan to make a few trips to the farm to get enough berries to last us for a week or so, without feeling the need to go crazy bringing home extra berries for jam or freezing or whatever.
With a cookbook deadline this summer, I am trying to be careful about not stretching myself too thin!
Of course, we love to eat strawberries just as they are, but it’s also fun to add them to all kinds of other foods too.
So far, we’ve had…
- strawberries with honey and homemade yogurt
- strawberries with the best old-fashioned pound cake and homemade vanilla ice cream
- strawberries with our favorite easy morning pancakes and fresh whipped cream
AND strawberries in this tasty, sweet and tangy salad dressing!
Strawberry Balsamic Vinaigrette
We’ve been enjoying this strawberry balsamic vinaigrette on salads for lunches and snacks and easy sides for dinner. When we need some extra oomph to our salads, I make ridiculously easy chicken breasts in my Instant Pot. Add a little feta and a small handful of sliced almonds, and you have a truly delicious and satisyfing salad.
(ALLLLL of my family went for seconds when I made this for lunch the other day! Even my husband who isn’t always in love with salads for meals).
The dressing itself is SO SIMPLE to make. Everything just mixes together in a blender for approximately sixty-two seconds.
I am making the vinaigrette in the first three minutes of this video, then part two is making an easy, gluten-free and naturally sweetened, strawberry crisp.

Description
This strawberry balsamic vinaigrette is the PERFECT summer salad dressing! Even better if you make it with farm or garden fresh strawberries!
Ingredients
- 1 C halved strawberries
- 1/4 C olive oil
- 2 Tbsp balsamic vinegar
- 1 Tbsp honey
- 1/2 tsp salt
Instructions
- Blend the strawberry halves in a blender until smooth.
- Turn the blender on low and add each remaining ingredient one at a time until the dressing is smooth and all the ingredients are incorporated.
- Drizzle over salad or on fresh bread.
