A week or so ago, my husband mentioned that he was getting tired of our usual fried eggs every morning. I get it. We eat fried eggs almost every morning. After all, it’s free (relatively, we have chickens), and it’s healthy and filling.
To give him a break, I made him an easy frittata the next morning. Easy, but OH-SO-DELICIOUS.
Whenever we have extra egg whites or egg yolks from creme brûlée or cookies left in the fridge, a frittata is going to be on the menu the next morning. It helps that there is always something we can add to our frittatas– cheese, veggies, breakfast meat– the options are endless.
I can’t tell you why, but my picky toddler GOBBLES up frittatas. Spinach, tomatoes, and all. That alone is reason enough for me to make them more often.

This frittata may not be made exactly according to the frittata rules, but it’s how we have made them for a loooong time. It’s quick and easy and foolproof. I’m sticking with it.

I cook almost all our eggs (and so much more) in my 10″ cast iron skillet from Lodge. If you are hesitant about cast iron, because #learningcurve, I highly recommend jumping in with Lodge pans. They are not expensive, but great to use. You can check out this video about using and caring for cast iron pans for more tips and help.

Perfect Quick & Easy Frittata

Description
This easy frittata is amazingly delicious and simple to make! It’s perfect for adding a variety of veggies and extra protein to your breakfast routine!
Ingredients
- 8–10 eggs
- 1/4 cup whole milk
- salt and pepper
- toppings*
Instructions
- Prep your toppings and set to the side. Heat a 10″ skillet over medium heat.
- Combine the eggs and milk in a mixing bowl and beat with a fork. Grease the pan with a tablespoon of ghee and swirl to coat the bottom. Pour in the eggs and don’t stir. Season with salt and freshly ground pepper.
- Cover the pan with a glass lid and let the eggs cook for about five minutes, until the sides begin to set. (While the eggs are cooking, turn your oven onto BROIL on the high setting and let it get hot). Remove the lid from the pan and add the toppings, ending with the cheese.
- Place the pan in the oven turned on to BROIL. Leave the pan in for 5-10 minutes, until the cheese is melted and beginning to brown, and the top of the frittata is cooked through.
- Remove the pan from the oven and set on trivet. Let the frittata cool for about 5 minutes, then slice and serve!
Notes
*Some of our favorite toppings are cheddar cheese, feta cheese, crumbled bacon, chopped sausage, tomatoes, mushrooms, onions, peppers, and chopped spinach/greens.
