These double dark chocolate pumpkin cookies are a healthy, naturally sweetened snack cookie! Even better, they are packed with nutritious ingredients!
Having kids, and especially being pregnant, has turned me into a serious cookie monster. I love cookies, and if there are cookies around to be eaten, you can be sure I will enjoy my fair share. And then probably a few more.
This is especially dangerous when we have fresh chocolate chip cookies on hand (read: not a healthified version. Just good, ol’ butter, sugar, and chocolate). Or, even more nutrition-flinging-out-the-window, when a blue package of double-stuffed goodness finds it’s way into my kitchen.
Now, don’t get me wrong. There is a time and a place for those things. Like this week when we opted to make our own ice cream sundaes at home with crushed cookies and homemade chocolate sauce. Because after promising my kids (and myself) ice cream, and then arriving at the restaurant only to find a sign on the door informing us that their ice cream machine was broken, what was a promise-keeping mom to do?
Generally speaking, though, cookies are among the long list of foods I prefer to make at home myself. They just TASTE BETTER. And they are not that hard to make.
Another obvious benefit of making foods at home, from scratch, is being able to control the ingredients. Unbleached flour or gluten-free alternatives. Coconut oil instead of shortening. Delicious, nutrient-rich grass-fed butter. Less sugar, or even better, natural sweeteners.
Then, sometimes, you can even sneak a vegetable (hello beautiful orange pumpkin) into your cookies. Throw in vitamin and antioxidant all-stars like honey and dark chocolate, and you are positively winning at life. (This is what I tell myself when I pass around the cookies).

These are a few of the suggestions that were thrown out as names for these double dark chocolate pumpkin cookies. They are rich and full of chocolate flavor, but they aren’t really your typical chocolate cookies. Since they are sweetened with honey, they have a cake-ier texture than you’d get with a cookie traditionally sweetened with refined sugar.
But, no matter what you call them, they are yummy and a great way to satisfy that chocolate craving you have around snack time or after dinner (or all day).

(Naturally Sweetened) Double Dark Chocolate Pumpkin Cookies

Description
These double dark chocolate pumpkin cookies are a healthy, naturally sweetened snack cookie! Even better, they are packed with nutritious ingredients!
Ingredients
- 4 Tbsp butter, softened
- 1 C pumpkin puree
- 1/2 C honey
- 1 1/2 tsp vanilla extract
- 1 egg
- 1/4 C cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 3/4 tsp salt
- 2 C flour
- 1 (heaping) C dark chocolate morsels
Instructions
- Preheat oven to 375 degrees.
- Whisk together the butter and the pumpkin until smooth. (The mixture will not completely cream together, but that’s okay). Add the honey, vanilla, and egg. Whisk again until all the wet ingredients are incorporated.
- Add each dry ingredient a little at a time and stir to combine. When no streaks of flour remain, stir in the chocolate morsels.
- Drop tablespoon size portions of the cookie dough onto a baking sheet lined with parchment paper. Flatten slightly with a spoon or spatula. Bake in preheated oven for 11-12 minutes.
- Transfer the warm cookies to a cooling rack and press tops slightly with spatula (optional).
- Repeat steps 4-5 with remaining cookie dough.
These are delicious!! I make a double batch to keep lots in the freezer since I’m breastfeeding and crave sugary treats. 🙂
