This Instant Pot gnocchi soup is creamy, sweet perfection. It’s potato soup taken up a notch, with pillowy potatoes and vegetables, but still with the comfort of a bowl of potato soup topped with cheese and bacon.
You guys have been asking me for an Instant Pot potato soup recipe on Facebook for a while. It seems like every time I demonstrate a soup recipe or talk about the new Instant Pot freezer soup plan, someone asks about a potato soup recipe. This is, of course, totally understandable because potato soup is classic and delicious.
Well, I hope you won’t be too disappointed, but instead of the requested standard potato soup…I made something even better.
We had a few packages of gnocchi on hand, and I had an idea to use them in a creamy soup with carrots and chopped greens. Of course, since the gnocchi is a potato pasta, the soup is very much reminiscent of your favorite potato soup. Especially if you top the soup with shredded cheese and crumbled bacon. YUM.
The first time I made this Instant Pot gnocchi soup for lunch, I asked my husband and kids for reviews. (I can always count on them to be honest, which is a blessing and occasionally an annoyance). All my husband could say was that it was incredibly delicious. I kept pressing and asking if there was anything he’d change, and he simply insisted it was perfect as it was.
I’ll take it.
Instant Pot Gnocchi Soup
I know that many of you prefer to just dump all your ingredients in your Instant Pot and start cooking. I get it. I dedicated an entire chapter of my cookbook to dump and go meals.
Hear me out, though. SOMETIMES IT IS WORTH IT TO DO JUST A LITTLE FLAVOR BUILDING. There is something magical that happens when onions and butter and heat meet. The onions become soft and sweet and amaaazzzing. I don’t always start by sautéing my onions, but when I do, my Instant Pot shoots rainbows and butterflies out of its pressure release.
Here’s what I do for recipes that call for sautéing before cooking. First thing: turn the Instant Pot on to Saute so it can begin heating up. Next: prep whatever is going to be sautéed. Then, add the sautéed ingredients (onions, meat, etc). WHILE THE FOOD IS SAUTÉING, prep the rest of your ingredients. This may be as simple as opening cans of whatever, or chopping a few carrots, or pulling broth out of the fridge.
This way you aren’t really spending any extra time on the recipe. BOOM.

Description
This Instant Pot gnocchi soup is creamy, sweet perfection. It’s potato soup taken up a notch, with pillowy potatoes and vegetables, but still with the comfort of a bowl of potato soup topped with cheese and bacon.
Ingredients
- 2 tbsp unsalted butter
- 1/2 cup minced yellow onion
- 2 minced garlic cloves
- 1/2 tsp kosher salt
- 17oz gnocchi
- 4 cups chicken stock
- 1 heaping cup chopped carrots
- 1/2 cup heavy cream
- 2 tbsp all-purpose flour
- 1 cup spinach
- 1 cup crumbled bacon
- 2 cups shredded cheddar cheese
Instructions
- Turn the Instant Pot on to Sauté. When the screen reads HOT, add the butter, onions, garlic, and salt. Sauté the onions and garlic in the butter for about 5 minutes until the onions are softened and beginning to brown.
- Add the gnocchi, chicken stock, and carrots to the Instant Pot. Stir once to incorporate, then place the lid on the Instant Pot, turn the valve to sealing, and set the cook time for 1 minute on high pressure.
- When the cook time is complete, quick release the pressure. Whisk together the cream and flour, then pour the mixture into the Instant Pot. Turn the Instant Pot back on to Sauté and stir. Bring the soup to a simmer for 3-5 minutes, until it thickens slightly.
- Add the spinach to the soup, and stir until it begins to wilt.
- Serve with crumbled bacon and shredded cheddar cheese (optional).
Notes
Sautéing the onions first adds a sweetness and richness to the soup. However, you can skip this step if you are really pressed for time.

Just curious why it’s called “sweet” soup? The name sounds like it’s made with something sweet, sweet potatoes or something.

Just made this on a cold day and it is quick, easy, yummy comfort food. What a great idea to use gnocchi! I would use the sharpest cheddar possible to give it a punch, and some sliced scallions on top is also a nice touch. Really good! Thank you!

I have never used gnocchi, how do you find it in the store? Is it frozen or boxed like pasta? Can’t wait to try this. I love your recipes. They are easy and tasty but best of all you use real food. My son has had thyroid cancer so I have removed as many toxins as possible from our home. Thank you!

It’s typically just like boxed pasta, so I would look there. Occasionally you might find it in the refrigerated section. It’s a pantry item that I just keep in my cupboards. I’ve found it at Costco before, and most recently picked some up from an Italian market.

I made this soup tonight. It tasted great and hubby said I could make it any time. The only thing is that when I did the quick release the steam made a mess on the nearby cupboard and the lid of the pot. Any suggestions?

You can try to do an intermittent release, where you let the pressure out a little at a time. Or, giving it five more minutes of natural release before releasing the pressure can help.
