Not that every day is sunny and bright. Actually, we have had a very rainy month. But the higher temps definitely cause a shift in what we eat for lunch.
During the spring and summer months, it’s all about lighter foods, full of fresh seasonal flavors, that take about 15 minutes to put together or things that can be prepped the morning or the weekend before.
Full disclosure: I make an exception for pizzas. I could never say goodbye to lunch pizza for an extended period of time and I’m totally willing to crank up my double oven for crispy, cheesy, AMAZING PIZZA. (Especially this one recently). But I digress…

One-Minute Easy Guacamole
Guacamole used to be one of the convenience foods I would pick up from Costco. I may still keep a few packs in the freezer for using in a pinch, but I’m a fresh guacamole convert.
It.just.so.easy.
I love that it has more texture than the packaged version. And, no real surprise here, this one minute guacamole tastes better too. We NEVER have any leftover.
My kids are huge fans of guacamole. I have been buying a bag of avocados at Costco or Aldi and then whipping up batches of this easy guacamole whenever the avocados ripen.
I am not even exaggerating that it takes ONE SINGLE MINUTE to make this guacamole!
This guacamole is easy and simple, but of course, you can always add your own twist to the recipe. I love it because it’s so quick to make and I don’t feel the need to chop anything else to go in it. But I’m sure it’d be delicious with some minced red onions, jalapeño pepper, roasted corn, or chopped tomatoes.
Whenever possible (which is almost always) I serve the guacamole with fresh salsa and homemade yogurt. Truly a trio of perfection.

One-Minute Easy Guacamole

Description
This easy guacamole can be made in ONE MINUTE! We’re talking change-your-life simple and delicious!
Ingredients
- 2 ripe avocados
- 1 Tbsp lime juice (about half a lime)
- 1/2 tsp kosher salt (more to taste)
- 1/2 tsp garlic powder
Instructions
- Cut the avocados in half, remove the pit, and squeeze the ripe avocado into a small bowl. Discard the pit and outer peel.
- Add the lime juice, salt, and garlic powder to the avocados and mash with a fork.
- Serve and enjoy!
Notes
Spice it up! This guacamole is delicious on it’s own, but if you’re feeling a little extra festive, you can add minced red onion, minced jalapeños, roasted corn, or chopped tomatoes.
Serve with chips, fresh salsa, homemade yogurt, and sliced cheese for a quick and easy meal or snack! Or serve with sheet pan nachos or tacos.
Looks Yummy.. I have never tasted Guacamole.
