These easy tortilla pizzas make a quick and delicious meal idea that is both frugal and family friendly!
I wasn’t sure what I going to share today, but when I made a family favorite for our lunch this afternoon, I decided to snap a few photos and take a quick video of the process to share it with you.
I’ve made it no secret that we love pizza here, and especially at lunch time. This is just another twist to a lunch pizza– except even easier and full of tex-mex goodness!
These tortilla pizzas are also made with ingredients that I almost ALWAYS have on hand, which makes me love them even more. No planning ahead necessary. No special trips to the store required.
If you don’t already have salsa on hand, (I didn’t today), but you have cherry tomatoes (or another fresh tomato, or even canned tomatoes!), you can throw together a fresh salsa very quickly and easily. My food processor helps to make fresh salsa a 5 minute job.

Besides the salsa, I always like to have beans in the freezer to use for soups, simple dinners, quesadillas, freezer burritos, and so on. I buy them in bulk, cook them in a big batch in my Instant Pot, and freeze them to pull out whenever I need them.
The guacamole is also pulled out of the freezer, but it’s not homemade. Guacamole is on my staples grocery list that I make sure I keep stocked from Costco. It comes in four little pouches and they each go in the freezer until I need them, too.
Finally, yogurt. I make a batch about once every week and a half from a gallon of milk, and it subs so well for sour cream that I rarely use anything else. Making yogurt is another super easy process!

Description
These easy tortilla pizzas make a quick and delicious meal idea that is both frugal and family friendly!
Ingredients
- 6 whole wheat tortillas
- olive oil
- 3 1/2 C pinto or black beans (about 2 cans)
- 3/4 tsp each: garlic powder, onion powder, & ground cumin
- 1/2 tsp chili powder & kosher salt
- 3 C shredded cheddar cheese
- salsa
- guacamole
- plain Greek yogurt or sour cream
Instructions
- Mash the beans in a small mixing bowl and stir in the seasonings. Set aside.
- Place half the tortillas on a baking sheet and brush both sides of tortillas with olive oil. Place the tortillas under the broiler for 2-3 minutes, until they begin to brown and crisp.
- Flip the tortillas over and top with seasoned, mashed beans (about a heaping 1/2 C on each tortilla), and shredded cheese (about a 1/2 C on each tortilla). Return the tortillas to the oven and broil again for about 2 minutes, until the cheese is melted and bubbly.
- Top the tortillas with salsa, guacamole, and yogurt. Add additional toppings to choice.
- Slice with a pizza cutter and serve immediately.

Lisa…..If I cant use a broiler, what oven temp can I use to bake these tortillas, whether they’re wheat or flour. Just found your website today and it is fascinating!

I would use a higher heat like 425 or 450. You just want them in long enough for the cheese to melt.
These are excellent! I added some jennio -o italian seasoned ground turkey and they were so good. Will definitely be making these over and over. Very easy to make!
