Summer Picnic Series:
Yesterday I shared a recipe for delicious homemade tortillas. And making quesadillas is one of our favorite ways to use tortillas. Quesadillas are a great lunch idea because they are quick and because whatever is on hand can easily be used to make lots of different combinations. The fact that they are so portable and don’t require utensils make them great for picnics too.
Cheese and bread by definition are kid friendly. Melting them together might win you mom-of-the-year status to your kids. Plus, these two super agreeable ingredients make any added ingredients more palatable for little eaters (or older picky eaters!) and so it’s a good opportunity to add in some extra protein and vegetables. Everything melts together in gooey, hand-held wonderfulness.
The possible combinations for delicious quesadillas are almost endless. Here are some of our favorites:
Stromboli Style Quesadilla
Mozzarella cheese, Parmesan cheese, chopped salami, spinach, and sauteed onions and peppers.
Chicken & Mushroom Pesto Quesadilla
Sauteed mushrooms and chicken, pesto sauce, and mozzarella cheese.
Margherita Quesadilla
Mozzarella cheese, fresh tomato slices, freshly ground pepper, roasted chicken, fresh basil.
Tex-Mex Quesadilla
Black beans, diced tomatoes, cheddar cheese, and spinach.
Avocado, Chicken & Cheese
Thin slices of avocado, roasted chicken, feta cheese, cheddar cheese.
