One of my goals this year is to simplify our lunch routine.
In an effort to better manage our time during the day, and to keep my grocery budget in check, I’m trying to stick to lunches that come together quickly and are heavier on produce than meats.
The one thing I can’t sacrifice for efficiency and frugality, though, is food that is filling. Because, while I honestly do enjoy the occasional pb&j, it just doesn’t fill me or my family up. An hour or two later, we are all hungry again and looking for something else to satisfy our appetites. (Which around nap time, typically means resorting to cookies or other foods that take as little time as possible away from my sitting on the couch in quiet, catching up on the rest I’m still missing at night).
Soup has always been one of my favorite options for lunches at home. Filling, frugal, versatile. It can be brothy or creamy. Made with or without meat. Full of lots of vegetables or just a favorite few.
Today I’m sharing a list of our favorite soups. It’s not a really long list because I only included soups that we’ve made many times and that are enjoyed by everyone in our family. And since this is a list that is supposed to help get lunch on the table in a timely manner, they all can be made in about thirty minutes.

Cheesy Chicken and Salsa Soup
Ingredient List
- 2 Tbsp extra-virgin olive oil
- 1 onion, diced
- 1 14oz can diced tomatoes
- 1 C salsa
- 2 C shredded chicken*
- 2 C chicken broth*
- 1 C water
- 1 C whole milk
- 2 C shredded cheddar cheese
- salt to taste
*Substitute vegetable broth and black beans for a vegetarian version.
Method
1. Heat oil over medium heat in a large saucepan. When the oil is hot and shimmery, add the diced onion and sauté for about 5 minutes until they start to soften and become translucent. Add the tomatoes, salsa, shredded chicken, broth, and water. Stir and bring to a simmer over medium-high heat.
2. Reduce the heat to medium and pour the milk and cheese into the pot. Reheat until the soup is warm and the cheese is melted. Add a pinch of salt at a time to taste.
3. (Optional) Serve with additional shredded cheese and tortilla chips.
