Making sourdough pancakes with discard is so easy, so delicious, and such a great way to put any extra starter you have leftover during the week to use!

I’ve been making sourdough regularly for well over a month now, and I’m totally loving it.
At this point, I have a bit of a routine going. The weekends are for prep-ahead baking. I make two to three loaves of Kate’s sandwich bread, and another round loaf (maybe a basic boule, or cinnamon raisin… the second type varies). I’ve also been baking extra for my in-laws.
Then, during the week, I might bake another basic boule, some dinner rolls, a fruit & nut bread. Again, it varies based on what we are going to be eating during the week.
Even though I’m not baking everyday, I am still feeding my starter everyday. If I’m not planning on doing more than one loaf, I just feed about 2-3 ounces of starter with the same amounts of flour and water.
Daily feeding, even without daily baking, means that during the week I have a little extra most days. I keep my discard (extra starter) in a pint sized mason jar in the fridge. When it’s full, it’s time to make some sourdough pancakes!
Easy Sourdough Pancakes with Discard
I adapted this recipe from Farmhouse on Boone’s sourdough pancake recipe. I used her recipe for a few weeks, then made some adjustments that I’ve been really happy about.
- swapped oil for applesauce
- swapped honey for maple syrup
- added a little cinnamon
- beat the eggs a little first for smooth mixing
And, honestly, I wanted a recipe that was it’s own post so that it was a little easier to find.
If possible, pick up some fresh summer fruit to enjoy with these pancakes! We had them with chopped farm-fresh strawberries last week, and they were amazing!

Making sourdough pancakes with discard is so easy, so delicious, and such a great way to put any extra starter you have leftover during the week to use!
Ingredients
- 2 cups sourdough discard
- 1/4 cup unsweetened applesauce
- 2 eggs, lightly beaten
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp sea salt
- 1 tsp baking soda
Instructions
- Combine the sourdough discard, applesauce, beaten eggs, and maple syrup in a medium mixing bowl. Whisk together (not very vigorously, just enough to incorporate) the wet ingredients. Stir in the cinnamon, sea salt, and baking soda.
- Heat a griddle or pan over medium heat. When the pan feels warm when your hover your hand over it, grease the pan with a little butter. Add quarter cup portions of dough on the hot griddle. Flip the pancakes when there are bubbles and the bottoms are lightly browned. Cook on the top side for a couple minutes, then transfer the pancakes to a warm oven while you cook the remaining pancakes.
