There really isn’t much tastier than layers of buttery pie crust, a delicious filling, and a sweet glaze. Especially if it’s made fresh at home.
These pumpkin pie pop-tarts are just that– layers of amazing goodness. They do not disappoint.
Thankfully, they really are not that difficult to make yourself, either. You can make a single batch for breakfast or a snack, or make a big batch and freeze some for later. I usually do the latter, because if I’m going to go to the trouble, it’s nice to have extras for later.
The thing about working with pie dough is that it nicest to you when it’s at the right temperature. You want it to be malleable, but not too soft. Give it time to chill in the fridge, and then take it out about ten minutes before you’re ready to get started. It’s always better to start with pie dough that is too cold, rather than too warm.
Being generous when you dust the countertop with flour is very stress-reducing as well. The dough will take in some of the flour as you roll it out, and you want a little to be left over by the time it’s time to lift the pop-tarts onto the baking sheet. I also HIGHLY recommend this tool, for much more than just pop-tart making.
Whether you not you add the glaze is up to you. I do it about fifty-percent of the time. They will be delicious either way, but adding a cinnamon sugar coating obviously takes it up a notch!
Pop-tarts, pumpkin or otherwise, are also a fun idea for inviting friends over. The process is simple and kid-friendly, and the end result is both quick and yummy. Always good for working with kids.

Skip the boxed pop-tarts, and make these delicious pumpkin pie pop-tarts at home! The difference is amazing!
Ingredients
- 2 disks of pie dough
- 2 C pumpkin puree (not pumpkin pie mix)
- 1/4 C maple syrup
- 1 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
Icing
- 1 C powdered sugar
- 1/2 tsp cinnamon
- 1 1/2 Tbsp warm water
Instructions
- Preheat the oven to 400.
- Mix together the pumpkin puree, maple syrup, and spices and set aside.
- Roll out the pie dough on a generously floured countertop, sprinkling the top with flour as needed to prevent it from sticking to your rolling pin. Roll the dough into a large rectangle, about 1/4″ thick.
- Trim the edges of the dough to make four straight edges, and then cut 12 rectangles from the dough. Spoon about a heaping tablespoon of filling into six of the rectangles, gently smoothing it out, but leaving a half-inch border around the edges.
- Cover the filled rectangles with six of the unfilled rectangles and gently push down with your fingers to seal. Carefully move the pop-tarts to baking sheet lined with parchment paper. Gather the dough scraps and roll them out to make one or two additional pop-tarts.
- Press around the edges of the pop-tarts with a fork to seal the two layers together. Poke several holes in the top of the pop-tarts with the fork. Beat an egg in a small dish, and then brush the tops of the pop-tarts with the egg.
- Bake in preheated oven for about 15 minutes, until golden brown. Remove from oven and cool completely before icing.
- To make icing: Combine the powdered sugar and cinnamon together in a small bowl, and then whisk in a tablespoon and a half of warm water to make a thick glaze. Use a spoon to drizzle the glaze over the cooled pop-tarts.
