- 5 C broccoli florets
- 1/2 C sliced almonds
- 1/2 C dried cranberries
- 1 C Greek style yogurt
- 1/3 C orange juice
- 1/2 teaspoon kosher salt
1. Chop the broccoli florets into small pieces.
2. Combine chopped broccoli, almonds, and cranberries in a bowl.
3. Stir together yogurt, orange juice, and salt in a small mixing bowl. Pour over broccoli mixture and stir well to coat all the broccoli pieces with the dressing.
4. Refrigerate. Serve cold.
If you don’t have orange juice, you can just blend up an orange in a blender and mix that with the yogurt.
Also, I would not suggest making a big batch at once (unless you’re sharing it with a crowd) because it doesn’t keep very well past a couple of days. But considering how easy it is to throw together, this isn’t really a problem.
