We took a spontaneous day trip to the mountains last week. It was my husband’s day off and we all were needing some quality time together. I never regret getting away and spending time outside, especially when we can be in the mountains.
We spent the day hiking together, exploring an old homestead, playing in the water, and picnicking with some new friends.
One result of trying to get out the door so quickly was that I forgot to bring plates or utensils for our food. We made do with our fingers and disc golf frisbees for plates.
In the heat of summer and in the middle of a day of exercise, I crave food that will replenish my body and give me the nutrients I need to keep going. And if my body needs it, then my kids’ bodies certainly need healthy food as well.
I love being able to give them plates of juicy fruits to help rehydrate, proteins to feed their muscles and fight fatigue, and vitamin-rich vegetables to keep them alert and strong.
Before we left in the morning, I made some muffins packed with carrots, oats, and raisins. Then while the muffins were baking I threw together this salad. The only step besides stirring is chopping up the broccoli florets into smaller pieces. The whole salad was finished in under ten minutes.
The dried cranberries and the orange juice help to make this a sweet salad without any other added sugar. The salad’s sweetness and the smaller pieces of broccoli help to make it more kid-friendly too.
Sweet Broccoli Salad

Ingredients
- 5 C broccoli florets
- 1/2 C sliced almonds
- 1/2 C dried cranberries
- 1 C Greek style yogurt
- 1/3 C orange juice
- 1/2 teaspoon kosher salt
Instructions
1. Chop the broccoli florets into small pieces.
2. Combine chopped broccoli, almonds, and cranberries in a bowl.
3. Stir together yogurt, orange juice, and salt in a small mixing bowl. Pour over broccoli mixture and stir well to coat all the broccoli pieces with the dressing.
4. Refrigerate. Serve cold.
Notes
If you don’t have orange juice, you can just blend up an orange in a blender and mix that with the yogurt.
Also, I would not suggest making a big batch at once (unless you’re sharing it with a crowd) because it doesn’t keep very well past a couple of days. But considering how easy it is to throw together, this isn’t really a problem.

When we went hiking, we took along carrot raisin muffins, fresh fruit (peaches and watermelon), and cheese slices. It was a great picnic to refuel us on a hot day!
