We are getting back into the regular school mode here, which means that easy meals are a big necessity right now. Everyone is adjusting to more responsibilities and demands on their time, including mom/head chef.
This skillet tortellini bake is somewhat of an indulgent meal, but it’s also one that can be made in fifteen minutes or less, and is totally a crowd pleaser. I like to serve it with a side salad to make sure that we are still getting in vegetable servings without adding much effort to dinner prep. Another option is to stir in a handful of chopped spinach/greens for a boost of color and nutrition.

Skillet Tortellini Bake
The fact that all of the ingredients can be kept in the freezer until you need a super easy meal makes this recipe even more of a life-saver on busy nights. I like to buy cheese tortellini at Costco and put both packages in the freezer. We may have one in this skillet tortellini bake, and use one for the Rainy Day Chicken Tortellini Soup recipe from my cookbook.
I also try to always keep marinara sauce on hand, kept in mason jars in the freezer too, until I need them. If you have my cookbook, there is an excellent big batch marinara sauce recipe in the back. Or, if you don’t have it yet, you can use this stovetop recipe.
Easy Weeknight Dinners
The past couple of weeks I have been heavily relying on easy meals during the week, and truth be told, on the weekend too. I am certain that once things calm down a bit and we find our groove again, I will be ready to take on dinners that require a little more effort at least a couple times a week.
But until then, there is no shame in rocking the easy dinner game. Actually, being able to put a homemade meal on the table even when life is crazy is absolutely trophy-merriting, gold-star level, game.

Description
This skillet tortellini bake is a super cheesy, super easy dinner idea that will satisfy the whole family!
Ingredients
- 1 lb ground beef
- 1 package cheese tortellini (16-24oz)
- 4 cups marinara sauce
- 1–2 cups shredded mozzarella cheese
- optional: chopped spinach/mixed super greens
Instructions
- Cook the tortellini in a pot on the stove according to package directions. Drain and set aside.
- Brown the ground beef in a 12″ cast iron skillet over medium heat. Drain any grease, then pour in the marinara sauce. Stir well, then heat until the marinara sauce is hot. Add the tortellini, stir to incorporate. (Optional: stir in a cup of chopped spinach or super greens).
- Top with shredded mozzarella cheese and place under the broiler until the cheese is melted and bubbly.
