Roasting food in the oven is almost a guarantee of good flavor, especially for vegetables. So not only is this sheet pan of roasted sausage and root vegetables incredibly easy to make, it’s also a major win for your tastebuds!
I haven’t watched the show Friends in years, but there is one scene that I will always remember. And laugh. So much laughing.
In this particular scene, one of the women (who is not known for being domestic at all) is really excited about making a dish from a cookbook for her friends. What she didn’t realize as she assembled the ingredients, though, is that many of the pages had stuck together. She was reading the first page of a dinner recipe and the back of a dessert recipe. The result was a very unfortunate mishmash.
Or so you would think. The odd dish was actually met with a great review by another “friend”, who declares, “What’s not to like?! Custard, good. Jam, good, Meat, gooood.”
That is exactly how I feel about this meal. Sausage, good. Onions, good. Roasted vegetables, good. Over roasted flavor, goooood.
Of course, it is equally worth noting how easy it is to prepare. We’re talking ten minutes or less of prep time. Peel, chop, drizzle, sprinkle, toss, and roast. Voilà! An all-in-one dinner ready to eat.
(Technically, this dish is plenty delicious and hearty all on its own. But if you’re feel extra generous and adventurous, cheesy drop biscuits or one-hour French bread both pair with it very well. Hint. Hint.)
Sheet Pan Roasted Sausage and Root Vegetables
Ingredient List
- 3 sausages (I usually use sweet Italian), cut into 1″ pieces
- 1 onion, cut into 1″ pieces
- 2 potatoes (sweet, red, or russet), cut into 1″ pieces
- another hearty vegetable– carrots, cauliflower, beets, etc
- olive oil
- kosher salt
- fresh ground pepper
- garlic powder, dried basil, dried oregano, or similar spice blend
Method
1. Preheat oven to 425°.
2. Line a baking sheet with parchment paper. Prepare the vegetables and sausages, and then combine them together on the baking sheet. Drizzle everything with olive oil and sprinkle liberally with salt, pepper, and spices.
3. Roast in preheated oven for about 40 minutes, until the sausage is cooked and the vegetables are tender. Stir once while it cooks if you must, but feel free to forget about it until the timer goes off.
4. Serve and enjoy immediately. Pat yourself on the back for a job well done.
