Roasted Zucchini Spears with “Secret Sauce”

Description

These crispy roasted zucchini spears with a “secret sauce” for dipping are addictive! The simple parmesan and panko breading keep this tasty dish easy and healthy!


Ingredients

Scale
  • 2 small/medium zucchini
  • 1 egg
  • 1 cup panko breadcrumbs
  • 1 cup shredded parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp chili powder

SECRET SAUCE

  • 1 cup mayonnaise
  • 2 tbsp ketchup
  • 2 tbsp yellow mustard
  • 1 tbsp pickle juice
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 1/2 tsp paprika

Instructions

  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or a silicon baking mat.
  2. Slice the zucchini into 3″ spears. Crack the egg into a bowl and beat with a fork, then stir together the panko, parmesan, and spices in a second bowl.
  3. Dip each zucchini spear in the egg, then roll in the panko mixture, pressing the coating on the zucchini slightly to help it adhere. Set the breaded spear on the baking sheet, and repeat with the remaining zucchini spears.
  4. Bake in preheated oven for 12-15 minutes, until the zucchini is tender and the breading is toasted and crisp.
  5. While the zucchini cooks, stir together the secret sauce ingredients. Serve alongside the roasted zucchini spears for dipping.
