I love zucchini in ALL FORMS. Quick fried with a tasty batter. Sautéed in a pan with onions (YES PLEASE). Shredded and cooked with dark chocolate in soft muffins. Roasted with heaps of other garden veg. Tossed together in the freshest summer pasta.
All.the.ways. I don’t think you can go wrong with zucchini. Which is nice when you grow it in your garden and you are picking new gourds nearly everyday.
Without a doubt, these roasted zucchini spears are one of the most addictive (and easiest) ways to enjoy zucchini. The crunchy outside…the tender inside…the tangy dipping sauce…PERFECTION.
Roasted Zucchini Spears with “Secret Sauce”
Roasted zucchini spears make a great side dish, a great snack, a great appetizer– like I said, you can’t go wrong.
Making them is simple. Just cut them into spears, dip them in egg to get them sticky, and roll them in the breading (a combination of crunchy panko, salty parmesan, and spices). While the zucchini spears bake, whip up a batch of the secret sauce.

Roasted Zucchini Spears with “Secret Sauce”

Description
These crispy roasted zucchini spears with a “secret sauce” for dipping are addictive! The simple parmesan and panko breading keep this tasty dish easy and healthy!
Ingredients
- 2 small/medium zucchini
- 1 egg
- 1 cup panko breadcrumbs
- 1 cup shredded parmesan cheese
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1 tsp onion powder
- 1/2 tsp cumin
- 1/2 tsp chili powder
SECRET SAUCE
- 1 cup mayonnaise
- 2 tbsp ketchup
- 2 tbsp yellow mustard
- 1 tbsp pickle juice
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1 tsp onion powder
- 1/2 tsp paprika
Instructions
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or a silicon baking mat.
- Slice the zucchini into 3″ spears. Crack the egg into a bowl and beat with a fork, then stir together the panko, parmesan, and spices in a second bowl.
- Dip each zucchini spear in the egg, then roll in the panko mixture, pressing the coating on the zucchini slightly to help it adhere. Set the breaded spear on the baking sheet, and repeat with the remaining zucchini spears.
- Bake in preheated oven for 12-15 minutes, until the zucchini is tender and the breading is toasted and crisp.
- While the zucchini cooks, stir together the secret sauce ingredients. Serve alongside the roasted zucchini spears for dipping.

Very easy to make. My taste buds were thrown off with the cumin and chili powder (although I love cumin in other dishes). I will simply adjust the seasonings next time. I loved the sauce and make one very similar to this that I use in our hamburger patties with sautéed onions. My family really enjoyed these!
