Okay, I know I say this a lot, but OH MY GOODNESS, I AM OBSESSED with these roasted okra fries!
Our okra plants are producing like crazy, and while my husband has successfully fried some of the okra in oil, I haven’t found the sweet spot for crisp, non-slimy fried okra yet.
No worries, though, because roasting okra is insanely delicious, not to mention ridiculously easy!
Roasted Okra “Fries”
Last night, I sliced our fresh okra into thin “fries” and roasted them to eat with our chicken and wild rice soup. While the okra roasted, I quickly stirred together the “secret sauce” I created to go with our crispy zucchini spears.
With or without a dipping sauce, the okra is perfect– crisp charred on the bottom and so tasty. Speaking of charring, I’m going to ahead and say something some of y’all might roast me for… I think for perfect charring you really need to skip the parchment paper. I love parchment paper, but I’ve been skipping it more and more recently when I’m roasting veggies or meat that I want to really develop the roasting flavor.

Post script: I cooked about 10 okra for this pan, but next time I will do at least 15. The fries were gone before I knew it! My kids and husband gobbled them up so quickly! (Much like they do with roasted carrot fries too!)

Description
These roasted okra fries are unbelievably delicious and so easy to prepare! They make a great finger food appetizer, or a healthy side dish that the whole family will enjoy.
Ingredients
- 10–12 okra*, quartered lengthwise into long strips
- olive oil
- kosher salt
- granulated garlic
- paprika
Instructions
- Preheat oven to 425 while you prepare the okra. Place the okra fries on a baking sheet with the cut sides down. (You want all the okra to be touching the pan and not overcrowded). Drizzle the okra with olive oil, then sprinkle liberally with the kosher salt. Finish with an even seasoning of garlic and paprika (about a teaspoon of garlic and half a teaspoon of paprika).
- Roast the okra without stirring in hot oven for 12-15 minutes until the bottoms of the okra are charred and crisp.
- Serve immediately, dipping sauce optional.
