I don’t know about you, but we always have ripe bananas on hand. This is partly intentional (I buy 2 or 3 bunches at a time), but also simply because bananas have a mind of their own about turning brown. One day they’re all yellow and firm, and the next they’re all speckled and soft.
Whenever I notice that I have a bunch of ripe bananas I know I have a decision to make. Because something’s gotta be done or I’m going to have a heap of overly ripe, mushy mess on my hands.
The obvious choice is banana bread. I mean, isn’t that naturally where your mind goes with ripe bananas? But there are plenty of other ways to use ripe bananas.
Which is exactly why I buy more than I know we can eat.
5 delicious ways to use ripe bananas ::
- Freeze for smoothies (obviously the easiest and quickest way to use ripe bananas)
- Bake banana bread (a classic and a go-to for a reason)
- Use them as a sweetener in muffins (carrot raisin muffins are a favorite go-to)
- Make faux bananas foster (an amazing sweet treat)
- Add mashed bananas to pancake batter or use as a topping for pancakes

I adapted my go-to recipe for vanilla maple ice cream to make this peanut butter and banana ice cream. Simple ingredients mixed right into a mason jar.

Description
This homemade peanut butter and banana ice cream is an easy-to-make summer treat and soooo good! Top it with chopped peanuts, chocolate, or crumbled cookies for even more fun and deliciousness!
Ingredients
- 1 1/2 C heavy cream
- 1/2 C whole milk
- 1/2 C peanut butter
- 1/4 C maple syrup
- 2 ripe bananas, mashed
- pinch kosher salt
- 1 tsp vanilla extract
Instructions
- Combine all the ingredients in a quart-size mason jar. Refrigerate for at least 3 hours.
- Pour the cold ice cream mix into the frozen canister of your ice cream maker. Churn for 20-25 minutes until thick and creamy.
- Serve, (optional) with chopped nuts, chocolate, or other toppings.
