Last night I sat at the table thinking (out loud) why we don’t grill out more often. Lighting the grill at least once a week has just been added to my summer bucket list.
Dinner was out of the park good, largely thanks to the awesome flavor the grill gives and thanks to the delicious marinade we used on the chicken and pork chops. I’ve been using this marinade for ten years now– way back to the early years in our marriage when I really didn’t know how to cook much of anything, but apparently could still whip up some pretty tasty chicken and veggie kabobs.
The marinade is so quick and easy and is one of the few things in the kitchen that I haven’t changed much over the years.
There are just five simple ingredients in the marinade– pineapple juice, soy sauce, maple syrup, and ground ginger and garlic. The combination not only adds flavor, but it also helps to tenderize the meat and prepare it for grilling.
You can use fresh pineapple for this marinade, but you can also keep little cans of pineapple juice on hand so you can have this marinade whenever you want. (Of course, this is assuming you keep soy sauce and maple syrup on hand like I do. Are they staples in your house too?)
Use it on…
- chicken breasts
- pork chops
- veggies like peppers, onions, mushrooms
- tofu (I’m assuming…I haven’t tried it personally)
- put it all together and make kabobs!

Easy Summer Marinade for Chicken, Pork, & Veggies!

Description
You can whip up this easy summer marinade in less than ten minutes. It’s perfect for chicken, pork, and veggies!
Ingredients
- 1 C pineapple juice
- 1/2 C low-sodium soy sauce
- 1/4 C maple syrup
- 1 tsp ground ginger
- 1 tsp ground garlic
Instructions
- Blend all the ingredients together. (If using fresh pineapple, first puree the pineapple in a blender or food processor before adding the remaining ingredients).
- Pour the marinade over chicken breasts or pork chops set in a glass dish, cover the dish and refrigerate for 2-4 hours.
- Remove the meat and discard the marinade. Grill the marinated meat and enjoy!
Notes
Makes enough for 6 chicken breasts or pork chops.
