Simple, delicious comfort food in a bowl. This quick dish of tortellini with shrimp and bacon is easy to make and easy to eat!
Lincoln logs and plastic cowboys and Indians are spread across the living room floor while my boys create elaborate storylines and scenes. Their play is intermingled with short discussions on different kinds of frontier houses and why some Native Americans were nomadic and others settled down with crops and long houses.
My daughter is donned in her first-ever princess dress-up clothes. Her play is much less stationary. One moment she is taking her baby for a walk in its stroller. The next she’s reading a favorite board book. Just a moment later, she’s learning that knocking down her brothers’ buildings comes with consequences.
I am a passive observer of it all. Cozy on the couch under a soft blanket, listening to Christmas music, and writing up what is sure to be a new family favorite recipe.
It’s the best kind of day. The kind of day when it is easy to see how rich we are, and how much for which we have to be thankful. Outings and special events are fun, but these are the days that fill up my tank and refresh my introverted spirit.
Thanksgiving is coming up next week, and after that a month of holiday cheer and festivities. I really am so excited, but I also know it’s going to be full and busy and, probably, just a little stressful. I will be thankful for some quick and easy meals to whip up after a long day or right before we head out to look at lights or enjoy hot chocolate by the backyard fire pit.

30 Minute Tortellini with Shrimp and Bacon
Description
Simple, delicious comfort food in a bowl. This quick dish of tortellini with shrimp and bacon is easy to make and easy to eat!
Ingredients
- 4 pieces bacon
- 1 lb cheese tortellini
- 1 Tbsp butter
- 1/2 lb raw shrimp, peeled and deveined, & cut into 1” pieces
- 2 Tbsp fresh garlic, minced
- 2 Tbsp flour
- 1 1/2 milk
- 1 C shredded Parmesan cheese
- salt, to taste
Instructions
1. Cook tortellini according to package directions. Drain, and set aside.
2. In a large, nonstick skillet cook the bacon until crispy. Transfer to a paper towel; chop when cooled. Drain the excess grease from the pan, but do not wipe out the pan.
3. Melt 1 tablespoon butter in the same pan, over medium heat. Add the shrimp and cook for 2 minutes, until the shrimp is pink and cooked through.
4. Add the cooked tortellini and chopped bacon to the shrimp. Stir to combine and cook for 2 minutes. Clear a small spot in the middle of the pan and add the minced garlic. Sauté the garlic for 30 seconds. Stir again to combine the garlic into the mixture.
5. Spoon 2 tablespoons flour across the top of the ingredients in the pan. Pour the milk in onto the flour and stir to thoroughly mix the flour and milk. Increase the heat to medium-high, and bring mixture to a simmer. When it starts simmering, reduce the heat to medium-low. Add the Parmesan and cook for 5 more minutes until the sauce thickens.
6. Salt to taste and serve immediately.

Fantastic recipe (as always)!!!
Just about to make this for my other half’s birthday dinner but I was wondering if I could use turkey bacon instead.
It contains less sodium so is a little healthier (she’s on a diet…again!)
