Happy Pie Day! Celebrate with a collection of delicious recipes featuring flaky pie dough for breakfast, dinner, and even snacking!
I have to admit to being a little cynical about so-called holidays like National Donut Day or Potato Chip Day or any number of other seemingly forced holidays. I’m working on leaving my cynical ways behind, though. One donut and handful of chips at a time.
But Pie Day? I can get behind that.
The last three nights in my home have seen three sick kids– and a mama who has barely slept in days. So as I lay in bed this morning trying to sneak in a little rest while my kids binged on Netflix, and I saw that today was pie day, I knew I needed to put together a celebratory post.
Had I not been awake for most of the night recently, I might have had more foresight to do more than an impromptu post. But, really, after scrubbing carpet the carpet at 3AM and washing and rewashing sheets, I think God in His providence knew I needed a day to celebrate the goodness of pie.
We don’t leave pie for special occasions, or even just for dessert. Which is why this post includes pie recipes for breakfast, dinner, appetizers, and, of course, dessert.
If pie isn’t doable today, have no fear. Any day will do. Invite some friends over or simply treat your family to something delicious.
Pie dough for every occasion…
I use this pie dough for everything, from savory tarts and chicken pot pie, to pop-tarts and apple pie. I love a versatile recipe which uses staple ingredients, don’t you?!
The directions tell you to use a food processor, and I would certainly recommend using one if you have one. The trick to a flaky, delicious pie dough is keeping the butter chilled. The recipe also calls for chilled vodka, and the reasoning is intriguing, but I have not used vodka for a long while now and my pie dough still turns out just fine.

Chicken Pot Pie
We have loved this recipe for years. It’s delicious for a dinner at home, great for taking along to potlucks, and freezes well for make-ahead meals.
If you make your pie dough, go ahead and make enough for a double pie so you can use the extra for breakfast pop-tarts or an easy dessert of almond joy hand pies or mini cherry pies!
Ingredient List
- single pie dough
- 3 bacon slices
- 1 onion, chopped
- 3 carrots, peeled and chopped
- 3 Tbsp flour
- 2 C chicken broth
- 1 C peas (I use frozen peas)
- 2 hard boiled eggs, peeled and chopped
- 2 C cooked, shredded chicken
- salt
- freshly ground pepper
- thyme
Method
1. Preheat the oven to 400°. Make the pie dough and chill in the refrigerator.
2. Cook the bacon slices in a skillet over medium-high heat until crispy. Remove the bacon slices to cool and chop. Drain all but 1 tsp of bacon grease from the skillet.
3. Add 1 Tbsp olive oil to the skillet, along with the chopped onions and carrots. Cook over medium heat for 5 minutes, until the onions and carrots begin to brown and soften. Sprinkle 3 Tbsp flour over the top of the mixture. Stir to make a roux. Pour in the chicken broth, stir, and cook 2-3 more minutes until the mixture thickens.
4. When the mixture has thickened, add the peas, egg, chopped bacon slices, and chicken to the pan. Stir to combine. Season with 1/2 tsp freshly ground pepper, 1 tsp kosher salt, and 1/2 tsp thyme. Taste and add more salt as needed.
5. Transfer the mixture to a oven-safe baking dish. Roll out the pie dough and top the chicken mixture with the pie dough. Cut four slits in the center of the pie dough.
6. Bake at 400° for 25-30 minutes. Cool slightly before serving (the center will be hot!).

Thanks for all of these awesome recipes!!! I love pie, but we don’t make it all that often aside from quiche (which, incidentally, I did make this weekend without thinking about Pi Day). This makes me excited to try out some new pie recipes! Maybe for Easter!
