Oatmeal Date Apple Muffins

Description

Healthy and delicious apple muffins naturally sweetened with honey, applesauce, and chopped dates!


Ingredients

Scale
  • 2 C flour
  • 1 C oats
  • 1 Tbsp baking powder
  • 1 Tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 C applesauce
  • 1/4 C honey
  • 1 egg
  • 1 tsp vanilla extract
  • 1 C chopped apple
  • 1/2 C chopped dates

Instructions

  1. Preheat oven to 375 degrees.
  2. Combine the dry ingredients in a mixing bowl (flour through baking soda). Whisk until blended. Combine the wet ingredients (applesauce through vanilla) in a large liquid measuring cup. Whisk until blended. Pour the wet ingredients into the dry ingredients and stir just until no streaks of flour remain.
  3. Stir in the chopped apples and dates. Scoop the muffin batter into the cups of a greased muffin pan.
  4. Bake in preheated oven for about 16 minutes, until muffins are cooked through.

Notes

*These muffins freeze really well. Simply reheat in oven or in the microwave for one minute.
